I set up a discord as well which isn't hosted by anyone but its dedicated on the discord team, so it should never go down.

Slack would be nice, if people are using it.

I can also setup an IRC server but that wouldn't be ideal without another server at least to link with.

e: We also have the option of using another IRC network. Freenode makes a little bit of sense as the EVEMu is open source, but there's plenty of options.
